  1. Preheat oven to 400 ° F. Place your shells on parchment paper on a baking sheet.
  2. In a medium pan, caramelize your onions at medium high heat for about 10 mn in 1 tbsp of olive oil and set aside.
  3. In a medium size bowl, mix your eggs and your cream. Season with salt and pepper.
  4. Mix the shredded cheese, the crab and the green onions in a small bowl . Garnish 15 of the shells with it.
  5. Add first the onions to the 15 remaining shells and top each of them with crumbles of the goat cheese.
  6. Pour 2 tbsp of the cream/egg mixture on each of the shells and bake for 10 mn.
