I love avocado! I’m so blessed to live in California where avocados are everywhere, all year round! And what’s not to love about avocado? Avocado is not only filling, it’s loaded with the good fats that are good for your heart. It has more potassium than a banana and will reduce your belly fat as well as your hunger. You can eat it, drink it, put it on your face. Avocado is a good friend to have!
Everytime I make homemade mayo (recipe here), I have to come up with ways to use it (since my recipe yields a good cup) so this dish is perfect for it. And in the summer, when I don’t feel like cooking, these stuffed avocados make for a great meal!
I have also served them as a beautiful appetizer for a three-course-dinner. You only need one half per person! You’re going to love this recipe because it requires just a few ingredients: a can of tuna for the protein, a handful of tomatoes for color, diced onions for crunch and spiciness. The lime juice gives it a touch of freshness and the mayo complements the smooth flesh of the avocado.
