I love recipes that can feed many with very little ingredients. I have been in charge of managing the grocery budget of my family since the age of 13. For reasons too long to explain for this post, I learned very quickly to be creative with my food and to stretch my budget. And pasta is one of the best ingredients to do so.


Sausages and onions

You’re gonna love this recipe because with only 5 sausages you can feed 8 people! Yes, 8! And it doesn’t lack in flavors at all: your palet will enjoy the sweetness of the caramelized onions, the bold flavor of the minced garlic, the tanginess of the grape tomatoes and the sweet taste of the red bell pepper.

The pieces of sausages make this dish hearty and the parmesan cheese gives it a nutty flavor.  The first time I made it, my daughter couldn’t stop wanting more. And you will too!

Rigatoni Sausage and peppers-min
  1. Bring a big pot of water with salt to a boil for the pasta.
  2. Meanwhile, in a large skillet, heat oil over medium-high heat. Add the sausages and cook until golden brown for about 6 minutes and set aside.
  3. In the same skillet, add the onions and cook for about 10 minutes until almost caramalized. Then add the bell peppers and cook for 2 minutes. Add the garlic and the tomatoes and cook for 1 minute. Turn off the burner.
  4. Cook the pasta according to directions.
  5. When the pasta is almost ready, return the sausage to the skillet and turn the burner back to medium high heat. Drain the pasta and keep 1 cup of the water.
  6. Add the pasta to the skillet and cook for 2 minutes adding some of the pasta water to deglaze the skillet and coat the pasta with the delicious flavors of the caramelized bits of cooked meat and onions. Add the parmesan cheese and the parsley. And serve immediately.
Recipe Notes

Add olive oil or butter when reheating the next day.
