Making great food doesn’t mean spending a lot. It can be tasty and beautiful to the eyes as well. I bought a can of wild salmon at Trader Joe’s last week for $3.99 and was able to make 6 beautiful cakes. Tasty, beautiful and easy: can’t ask for more!


Salmon cakes

I have always loved crab cakes but crab can get somewhat pricey. By swapping salmon for crab, you are not losing in taste and you are surely gaining in cost! The secret is seasoning. And simplicity is the key!

Salmon cakes mixture-

Onion, garlic and parsley is all you need in this area. And to make sure that those little babies are moist egg,mayo (homemade preferably) and bread crumbs will do the trick!

Make a chipotle mayo and a quick salad and you have an wonferful appetizer or even a light lunch.

Salmon cakes
  1. In a medium bowl, add the salmon, 1 egg, half of the Panko breadcrumbs, the onions, the parsley, the mayo and press the garlic into it. Season to taste. Mix well and shape into 6 patties.
  2. In a small bowl, beat the last egg. Dip the patties into the egg and in the remaining breadcrumbs.
  3. In a medium frying pan, heat up the oil over moderate heat. Fry the cakes for about 5 minutes on each side.
Recipe Notes

Add chipotle pepper and garlic to some mayo to make a spicy chipotle sauce to eat with the cakes.
