  1. In a medium pot, bring 4 cups of water with salt to a boil. Add your lentils and reduce the heat to a simmer. Cook for 15 to 20 minutes, depending on how firm you like your lentils. Once cooked, drain them and stop the cooking by rinsing them with cold water.
  2. In a salad bowl add your tomatoes, cilantro, onions and lentils. Make the dressing by whisking together the olive oil, balsamic vinegar, garlic, salt and pepper. Add to the salad and mix well. Finish by adding the feta cheese. Taste to adjust the seasoning.
Recipe Notes

I prefer letting the salad cool in the fridge for a good hour but it's also delicious as is, lukewarm.
