In France, when people get together, we usually have drinks and appetizers before the meal. It’s called “Apéritif” – pronounced “uh-pay-ree-teef”. It’s usually not taken at the dining table but in another room like the living room. I love that time of entertaining people, because that’s when conversations start flowing, that’s when people relax and talk. Because, yes, they may have come to eat, but the goal is really to spend time with each other, catching up or just getting to know one another.
Apéritif is often the last thing we work on when we prepare dinner. If we have time then we’ll make something or we just grab a bag of chips and some nuts to tame our appetite until dinner is ready. But I’m going to show you that in 15 minutes, you can have homemade appetizers that will make you feel like the best host(ess) in the world!
All you need is for these crackers are 5 ingredients: cheese, flour, eggs, melted butter and sesame seeds to make them more interesting to the eyes. and what takes the most time perhaps, is to shape your crackers, but not really… And you prepare your spread while they bake. I use Habanero peppers because they’re super spicy! With Habanero peppers, a small amount goes a looooong way. But of course, it all depends on your heat tolerance.
In a medium bowl, add your cheese, flour, egg, egg white and butter. Mix until smooth.
Line your baking sheet with parchment paper. Drop a small spoon of batter onto the sheet and flatten it to form a cracker. Repeat until you run out of batter and sprinkle with sesame seeds and bake for 10 minutes.
While your crackers are baking, prepare your spread: in a small bowl, add the cream cheese, sour cream, lime juice, cilantro, tomatoes, and Habanero pepper. Mix well. If the spread is too runny, add more cream cheese. Taste to adjust seasoning if needed (more lime or salt). Set aside in the fridge and serve with the crackers when ready. Enjoy!
A tip for you: the thinner those crackers are, the crunchier they will be. If you make them too thick they will be chewy. So be the hostess with the mostest! Make these little babies! Nobody will know it took you only 15 minutes from beginning to end!
