For the last 8 years, we have been hosting what we call “family dinner”, every other Monday. I will cook for between 12 to 30 people, depending on the week. Our guests are mostly campus students and some of our single friends who are in need of a fun family time.
We want to make the experience worth it so we always offer a main dish, salad and dessert.


Eggs and Milk for Mochi-

Cooking for that many people forces you to look for easy and inexpensive recipes. That’s what Butter Mochi is.

Butter mochi is a delicious chewy dessert originating from Hawaii, made with sweet glutinous rice flour. It is gluten free and great to be eaten for dessert or for breakfast.

Milk and Vanilla

You want to enjoy this deliciousness slightly warm or at room temperature and serve it with vanilla ice-cream. Enjoy! I know I did!

Butter mochi slice
  1. Preheat oven to 350 ° F and butter your baking dish.
  2. In a large bowl, mix together the Mochiko flour, sugar, and the baking powder.
  3. In a medium bowl, combine evaporated milk, coconut milk, eggs, and vanilla, and mix well.
  4. Add the wet ingredients to the dry ones and stir in the melted butter.
  5. Pour into your baking dish and bake until golden brown for about 45 mns. Stick a knife in the middle of the mochi to determine doneness . The knife should come out clean .
Recipe Notes

Serve slightly warm with Vanilla ice-cream. Do not store in the fridge and eat within 24 hours.
